Lamington Pancakes

Makes 2 Stacks

Ingredients:

2 bananas

1 cup self-raising flour

1 cup milk

2 Eggs

A pinch of salt

Toppings

1 cup raspberries

½ cup dark chocolate ganache

½ cup desiccated coconut

½ cup jam

½ cup whipped cream

½ cup pomegranate seeds

Method:

STEP 1: To the Kitchenaid K400 Blender jug, add bananas, self-raising flour, milk, eggs and salt.

STEP 2: Place the lid on, add the blender jug on the base, then turn the control dial to 4 and press the start button. Blend the pancake mixture for 1 minute until it’s fully combined. If any flour gets stuck on the wall of the jug, press down with a spatula and turn the dial to 2 and press the start button to mix again. Hit the stop button once the mixture has come together.

STEP 3: Place a greased pan on medium heat, then pour the pancake mix from the blender jug on to the pan so it creates a small disc. Pan fry for 1-2 minutes until the pancake starts to bubble and then flip it over, cooking for a further minute.

STEP 4: Repeat STEP 3 until all the pancake mixture is used.

STEP 5: To assemble the pancake stack, add a pancake to a plate, then spread a layer of jam on top. Stack with another pancake, then spread a layer of whipped cream on top. Repeat the process adding another pancake with a jam layer and one final pancake on top. Drizzle the top of the stack with chocolate ganache and sprinkle generously with desiccated coconut. Top with raspberries and pomegranate seeds to garnish. Repeat the process with the leftover ingredients to create a second stack.

STEP 6: Dig in and ENJOY!

Yellow Peach And Honey Sorbet

Makes 1 Litre

Ingredients:

300g (approx 3 cups) frozen peach, skin removed

1 frozen banana

1 cup frozen mango

1 lemon, juiced

2 tbsp honey (or natural sweetener)

Small loaf tin

To garnish

1 sprig of mint, chopped

Method:

STEP 1: To the Kitchenaid K400 Blender jug, add frozen peach, banana, mango, lemon and honey.

STEP 2: Place the lid on the blender jug with the tamper attachment, add the blender jug to the base, then turn the dial to ice crush and press the start button. Use the tamper to press the frozen fruit down towards the bladers. The Kitchenaid will run for a cycle of 30 seconds, so run it on multiple cycles until your sorbet reaches a super smooth consistency with no lumps.

STEP 3: Taste your sorbet as you go to ensure you’ve reached the desired level of sweetness and tang, then adjust lemon and honey accordingly.

STEP 4: Pour the sorbet into a loaf tin, cover with baking paper and store in the freezer for 2 hours before serving.

STEP 5: To serve, remove from the freezer 10 minutes prior to allow it to soften and use an ice cream scoop to serve in a martini glass. Garnish with fresh mint.

Choc Peanut Butter Balls

Makes 15

Ingredients:

1 cup peanuts

1 cup oats

1/4 cup cacao powder

1/4 cup desiccated coconut

1 cup dates, soaked in hot water, chopped

1/2 cup peanut butter

1/3 cup maple syrup

Pinch of salt

To coat

1 cup desiccated coconut

Method:

STEP 1: To the Kitchenaid K400 Blender jug, add peanuts and oats.

STEP 2: Place the lid on, add the blender jug to the base, then turn the control dial to 5 and press the start button. Blend the peanuts for 15 seconds until the mixture resembles fine crumbs. Be careful not to over blend, which may cause the peanuts to turn into peanut butter.

STEP 3: Pour the peanut mixture into a large mixing bowl, then add cocoa, desiccated coconut, soaked dates, peanut butter, maple syrup and a pinch of salt. Use a spoon to stir the mixture until fully combined.

STEP 4: Using wet hands, roll a tablespoon of mixture from the bowl into a ball. Add the ball to a bowl of desiccated coconut to coat, then place on a lined tray. Repeat STEP 4 until all the mixture has been used.

STEP 5: Allow the balls to set in the fridge for 1 hour.

STEP 6: ENJOY!

Easy Bearnaise Sauce

Serves 4

Ingredients:

1/4 cup white wine vinegar

1/4 cup white cooking wine

1 tbsp tarragon

½ a shallot, minced

3 egg yolks

½ a lemon, juiced

1 tsp salt

A pinch of pepper

3/4 cup melted butter

To garnish

A few tarragon leaves

To serve

Flat iron steak, cooked medium rare

Method:

STEP 1: To a saucepan add white wine vinegar, cooking wine, tarragon and shallot. Place on medium heat for 8-10 minutes and reduce until the liquid evaporates.

STEP 2: To the Kitchenaid K400 Blender jug add egg yolks, lemon juice, salt and pepper.

STEP 3: Place the lid on, add the blender jug to the base, then turn the control dial to 4 and press the start button. Once the blender has been going for 10 seconds, remove the cap and pour the melted butter in a thin stream through the opening. The egg should emulsify and thicken. Once this happens, press the stop button.

STEP 4: Add the shallot mixture from the pan to the blender jug and turn the dial to 2 and press the start button. Allow the blender to process for 30 seconds before pressing stop.

STEP 5: Serve bearnaise with a flat iron steak, cooked medium rare.
